Jonesy’s EatBar opened in June 2008, in the space was formerly my restaurant, The Dish Bistro.  I decided in the spring that my life needed a little simplification, and that running a higher end restaurant just wasn’t where I wanted to be.  I began thinking about and researching new concepts,  knowing that I wanted something warm and comfortable, small and manageable, with a focus on local craft beers, but still serving an exceptional list of wines by the glass with a menu of my favorite global comfort foods.  About halfway through writing the business plan, I came across the term “gastropub”...exactly my idea, all fleshed out and even defined in Wikipedia!  Yay!


Wikipedia defines a Gastropub as:

“…a British term for a public house which specializes in high-quality food a step above the more basic ‘pub grub’.  The name is a combination of pub and gastronomy and was coined in 1991 when David Eyre and Mike Belben opened a pub called The Eagle in Clerkenwell, London. They placed emphasis on the quality of food served.  Gastropubs usually have an atmosphere which is relaxed and a focus on offering a particular cuisine prepared as well as it is in the best restaurants.  Staying true to the format requires a menu that complements the assortment of beers and wines the gastropub offers.  Some describe gastropubs as the Anglo-equivalent of the French brasserie or the Japanese izakaya.”


In the United States, Gastropub concepts have become increasingly popular alternatives to traditional restaurants.  The first gastropub to flourish on American shores was The Spotted Pig in Manhattan which opened in early 2004 and enjoys continued success to this day.  Since then, Philadelphia, Boston, and Chicago have embraced the trend, and it continues to spread to many other cities.  Currently, Denver is home to many restaurants with nice beer selections, or  many bars with great food with no wine list, or  wine bars with tiny tapas menus, but it appears that no one as yet has embraced this trend that is perfectly suited for the manner in which Denver, and specifically the neighborhood surrounding our location, chooses to dine. 


Our dining room & bar is housed in the original soda fountain of a 1950’s era pharmacy, under a restored tin roof.  Our vibe is warm and friendly, just like our service!  We have a great patio for watching the beautiful Denver sunsets, or relaxing with the gang over some of our tasty speciality cocktails.  The next door billiards room is home to 2 billiards tables, dart boards & numerous cozy seating areas...the perfect place to woo a date or party with the office after work.
